Feta Phyllo Rolls

MAKES: 16 • PREP TIME: 20 minutes • COOK TIME: 10 minutes

HELPING HANDS: Kids can help make the fillings and roll the pastry.

Filling #1:
cup crumbled feta cheese
cup ricotta cheese
freshly ground pepper

Filling #2:
cup crumbled basil & tomato feta cheese
cup cream cheese

Phyllo Pastry:
pound frozen Phyllo (fillo) dough
cup butter, 1 stick, melted
cup shredded Parmesan cheese

Preheat oven to 400°F. Grease two baking sheets or line with silicone baking mats.

Prepare the Fillings:
In a medium bowl, combine feta, ricotta and pepper and stir until well mixed. In a separate bowl, combine basil & tomato feta and cream cheese and stir until well mixed.

To Assemble:
Place one phyllo sheet on a clean work surface. (Keep remaining sheets covered so they don’t dry out.) Brush evenly with melted butter. Place another sheet on top and brush with more butter. Cut into 2 strips, lengthwise.

Place 1 tablespoon of filling at the bottom of each strip. Roll the strip into a cigar shape. Press down on each end to seal. Place pastry on prepared baking sheet and brush with melted butter.

Repeat 7 more times, creating 8 rolls for each filling. Sprinkle each roll with a little shredded Parmesan cheese. Bake for 10 to 12 minutes or until golden brown.

Phyllo rolls may be prepared ahead of time and frozen. Bake without defrosting.
