Cucumber Salad

SERVES: 4 • PREP TIME: 10 minutes

HELPING HANDS: Kids can help make the yogurt dressing

cucumber, peeled
tomatoes, rinsed and diced
teaspoon sea salt
cup plain yogurt
red onion, finely chopped
teaspoon ground cumin
tablespoon minced cilantro
Juice of half a lemon
Dash freshly ground pepper
cup chopped cashews, optional

Slice the cucumber lengthwise. Scoop out the seeds and discard. Cut the cucumber into thin slices. Combine with tomatoes and salt in a small bowl. Let sit for 10 minutes. Drain. Meanwhile, mix yogurt, red onion, cumin, cilantro, lemon juice and pepper in a medium bowl. Gently stir in drained cucumbers and tomatoes. Cover and refrigerate for 1 hour. Sprinkle with chopped cashews before serving.
