Slice the cucumber lengthwise. Scoop out the seeds and discard. Cut the cucumber into thin slices.
Combine with tomatoes and salt in a small bowl. Let sit for 10 minutes. Drain. Meanwhile, mix yogurt,
red onion, cumin, cilantro, lemon juice and pepper in a medium bowl. Gently stir in drained cucumbers
and tomatoes. Cover and refrigerate for 1 hour. Sprinkle with chopped cashews before serving.
