Sautéed Green Beans

SERVES: 4 - 6 • PREP TIME: 5 minutes COOK TIME: 20 minutes

HELPING HANDS: Kids can help snap the ends of fresh green beans.

pound fresh green beans, rinsed and trimmed
OR, 1 pound frozen green beans
tablespoons olive oil
onion, peeled and chopped fine, about 1/4 cup
garlic cloves, peeled and minced
teaspoon sea salt
freshly ground pepper

For fresh beans, place 1 cup of water in a medium saucepan and bring to a boil over high heat. Add beans, reduce heat to low, cover and simmer for 5 minutes. If you are using frozen beans, defrost, and drain.

Meanwhile, heat olive oil in a medium, non-stick skillet over low heat. Add onion and sauté for 5 minutes, stirring occasionally. Add garlic and sauté for 1 minute more.

Drain beans and add to onion and garlic. Sauté for 10 minutes, stirring occasionally. Taste and adjust for salt and pepper.
